We are a distillery in a city. M&H, which is a part of the city's fabric and is situated in one of Tel Aviv's burgeoning districts, is a hub for makers, inventors, and entrepreneurs. Along with the coastline, the bustling markets, and the architecture, we constructed the distillery to be in our hometown. The Mediterranean environment and Israel's 300 sunny days per year on average are to our greatest benefit. Because of the hot temperature maturation, our whiskey matures quickly yet noticeably elegantly. Warmer climates cause the terroir of the whisky to change, producing distinctive tastes that are considerably different from their Old World equivalents. We continue the tradition of at least three years of age while using methods, tools, and equipment that are based on centuries-old knowledge. Our barrels are chosen through a thorough screening procedure, with thinking and preparation years in advance. In addition to our current selection of ex-bourbon, ex-red wine, and ex-STR barrels, we are always looking for new and intriguing casks, such as those made of pomegranate wine, kosher sherry, rum, etc. We have been striving for excellence from the start. To choose the best casks, we researched different regions of the world, tried various ingredients, and tweaked the formulas. We used the late Dr. Jim Swan, one of the most experienced master distillers in the world and a specialist in distillation and maturation in hot climates, as a consultant. Never consider making a compromise. From our specially manufactured historic copper pot stills to our process-wide quality control, we aim for perfection in every area.
