The third release in The Macallan's wood-focused Edition series saw master perfumer Roja Dove and master whisky maker Bob Dalgarno create a whisky using their very particular sets of skills. Dove pinned down the flavour profile for Edition No. 3 by using the same formula he would for a perfume: pinpointing complementary aromas, and balancing these with a “counterpoint” note. The resulting liquid is a combination of six American and European oak casks, with deliciously sweet, floral notes up front.

In Craigellachie, Moray, Scotland, there is a single malt Scotch whisky distillery called The Macallan. A completely owned subsidiary of Edrington, The Macallan Distillers Ltd. acquired the Highland Distillers trademark in 1999. Next to Glenfiddich and, by some estimates, Glenlivet, The Macallan is widely regarded as the second- or third-highest-selling single-malt scotch. The Macallan was first solely aged in wood sherry barrels that were sent to the distillery from Jerez de la Frontera, Spain. The Fine Oak series, a new flagship offering from The Macallan that debuted in 2004, has whiskey that has been aged in bourbon oak barrels in addition to sherry casks. The Triple Cask Matured range replaced the Fine Oak line as of 2018. On our estate in Speyside, Scotland, is where the Macallan Distillery is located. Here, in a place fit for the attitude it reflects, we craft our unmatched single malts. Just 400 meters from our former distillery and next to Easter Elchies House, our distillery was created by the highly regarded international architectural firm Rogers Stirk Harbour + Partners.
