The Waterford Distillery has traveled back in time to 1959, but not via a sophisticated silver machine filled with gadgets and gizmos, but rather by passing through a 50 gram bag of grain. This Irish single malt whiskey, dubbed Hunter 1.1 for its initial release, is named after the flavorful barley type that Dr. Herbert Hunter first created in the 1950s but which was eventually phased out in favor of better yielding crops. This grain has been resurrected by the Waterford distillery for a small batch of 50 barrels of whiskey, which is aged in a blend of French sweet wine, American oak, and both.

Mark Reynier, a former co-owner of Bruichladdich, established Ireland's Waterford Distillery back in 2015. It's interesting to note that the distillery was formerly a brewery that brewed Guinness, the famous Irish stout. With a concentration on local barley, whiskey is now the beverage of choice being produced in Waterford, demonstrating that terroir most definitely affects the final spirit. Single Farm Origin single malt whiskeys, which were introduced in 2020, are the result of Reynier and his team's collaboration with many regional farms. In addition, Waterford created the first Irish whiskey to be given an Organic Trust certification—Waterford Arcadian Gaia!
