Mark Reynier, a former co-owner of Bruichladdich, established Ireland's Waterford Distillery back in 2015. It's interesting to note that the distillery was formerly a brewery that brewed Guinness, the famous Irish stout. With a concentration on local barley, whiskey is now the beverage of choice being produced in Waterford, demonstrating that terroir most definitely affects the final spirit. Single Farm Origin single malt whiskeys, which were introduced in 2020, are the result of Reynier and his team's collaboration with many regional farms. In addition, Waterford created the first Irish whiskey to be given an Organic Trust certification—Waterford Arcadian Gaia!
