Bushmills' Master Blender, Alex Thomas, shared insights into the meticulous cask selection process, stating, "We scoured the globe to identify the perfect casks to bring back to our corner of Northern Ireland, spanning regions from Jerez in Spain to Kentucky in the United States and Marsala in Sicily." Collaborating with a global network of wine and spirit producers and expert cooperages, Thomas meticulously curated the ideal cask combinations to craft these exceptional single malts.
The 15 Year Old single malt undergoes a maturation process in a blend of ex-bourbon first-fill and second-fill American oak casks. This exquisite expression, bottled at 46% ABV, showcases the signature floral and fruity character of Bushmills, enriched by the bold flavors imparted by the bourbon casks. The result is a harmonious amalgamation of flavors, including notes of clove, toffee apple, honeyed vanilla, and sweet apricot, derived from its 15-year rest at the Old Bushmills Distillery.
On the other hand, the 21 Year Old single malt embarks on a remarkable aging journey, spending a minimum of 18 years maturing in ex-bourbon casks and oloroso sherry butts. It culminates its maturation with an additional three years of refinement in first-fill Marsala wine casks sourced from Sicily. These hand-selected barriques are seasoned with Marsala Fine Ambra Semisecco Doc wine, followed by a gentle toasting process, resulting in delicate, fruity nuances that enhance the whisky's complexity. Bottled at 46% ABV, the 21 Year Old boasts a flavor profile characterized by notes of ginger, stone fruits, hazelnut, chocolate, and oak.
