Talisker and Josh Niland, a powerhouse of a duo, have come together to create two unique dining experiences.
A pop-up event will be taking place for two nights, October 21 and 22 2022 at the rugged and beautiful North Head, New South Wales, Australia. The first event is called “Taste of Talisker” and consists of a three course meal paired with whisky of course. The second is called “Made by the Sea” and is a little more relaxed which consists of a two hour guided whisky evening. The whole goal of this experience is two bring together unique, sustainably sourced seafood combined with the flavours of Talisker, salt, smoke, and spice and showcase how well they play together.

About Josh Nilard
Josh Nilard is an Australian multi-award-winning chef, restaurateur and author. Josh has pioneered new ways to cook, transport, age and store fish. In 2016, at twenty seven years old, Josh and wife Julie opened Saint Peter, a small fish restaurant in a Sydney suburb, Paddington. In 2018 they opened up Fish Butchery which is a truly unique retail outlet. Fish Butchery is a fish market at its simplest. What makes it unique is its ice free, temperature controlled environment where only sustainably caught fish are dry handled and cut to order. Josh has two cookbooks, one called Take One Fish which won the 2022 James Beard Award for Visuals and one called The Whole Fish which won two James Beard awards in 2020 – Restaurant and Professional and the prestigious Book of the Year.
