About The Dubliner

The distillery structure, which was constructed in the 1700s, provides evidence of the area's industrial past. The distillery, which was initially intended to be a mill, was really largely a tannery that, for many years, specialized in curing rabbit skins. It is a significant character in the history of Dublin's old Liberties neighborhood. The structure offers a centuries-old tale that, as the Liberties neighborhood continues to develop, is in many respects evocative of the era of expert Dublin whiskey production. Modern artisan Irish whiskey distillery The Distillery also offers an outstanding visiting experience and serves as the nameplate for our Irish whiskeys. The distillery will produce our award-winning whiskey brands, Dubliner and Dublin Liberties, using only malted barley. The Dublin Liberties distillery features a six-ton mashing capacity, triple distillation with a first still holding 10,000 liters and the second and third stills holding 6,000 liters each, and the ability to create more than 700,000 liters of whiskey yearly. All of our malt comes from Irish farmers, and we get our water from a well inside the distillery that was created by rainwater that fell here more than 10,000 years ago. Although our fermentation and distillation process takes longer than others, we feel it provides an unmatched spirit that is ideal for manufacturing Irish whiskey. We have chosen our own yeast strain. Our whiskey is aged in dedicated whiskey facilities under the supervision of our talented team until it is suitable for consumption. We will let our premium whiskey age for longer than the minimum three years required for Irish whiskey to develop. We use a range of barrels to mature our whiskey, and we also design custom finishes for each of our whiskey varieties.
