Since 2005, the Kavalan Distillery in Yilan County, Taiwan, has been a leader in the single malt whiskey industry. Kavalan is made from the mineral-rich meltwaters of Snow Mountain and matured in a special environment that combines extreme heat, humidity, sea breezes, and mountain breezes. All of these factors work together to give Kavalan its distinctive quality, smoothness, and fruity flavor. Yilan County is now known as Kavalan. The entrepreneur Mr. Tien-Tsai Lee had dreams of a new whiskey homeland and a 'century-old' distillery that would survive for generations in this country of blessings. Mr. T.T. Lee traveled across the old world to the revered distilleries of Scotland and Japan as part of his quest to produce Taiwan's first whiskey. Every fiber of his determination was put to the test because he knew Taiwan had to be world-class to compete. With the help of a highly qualified R&D staff, Kavalan continues the work of the late Dr. Jim Swan, a recognized expert on whiskies.
