Lying in the Glenlivet estate, Tomintoul distillery is another gem in the treasure trove of Speyside. Although the distillery itself wasn't built until 1964, the village of Tomintoul boasts a whisky legacy spanning centuries. In fact the villagers themselves were "all sellers of whisky, and all drinkers too", if the words of a local minister back in 1797 are to be believed. This delicate single malt pays testament to this heritage with every sip. Cask Number: #32 Cask Type: 2nd Fill Sherry Butt, finished in 1st fill Calvados Cask Bottles: 254 Colour: Saffron Yellow Nose: You’d expect apple but this is almost overwhelming, from opening the bottle to the first pour the air is filled with the scent of somewhat Granny Smith apple, lychee, apple compote. Once the apple has had its way, it disappears to leave a surprisingly light, white floral note with a touch of barley sugar and almond flan, leather and linseed oil. Palate: Again apple, but this time layers of sweet apple, caramelised in butter and served with toffee; peached pear - delightfully sweet, a with touch of clove rock, key lime pie and lemon, cardamon and a touch of red spice. Finish: A brief, powerful explosion of anise, crunchy apple, lemon drizzle, and oak that develops into a long, clean earthy finish that lingers peculiarly at the back of the palate, tickling the throat, with a touch of cedar and tobacco.
