This whisky has a pleasant smokiness that is not overpowering. On the nose, there are notes of sweet fruits, peat smoke, and a hint of sea salt. The palate is dominated by smoky flavors, with a slight sweetness and a hint of oak. The finish is long and warming, with a gentle smoky aftertaste.

Tasting Notes

Notes: Caol Ila 18 Year Old is a complex and balanced Islay single malt that offers a perfect balance between peat smoke and sweetness. The 18 years of maturation in oak casks bring out a unique depth and complexity to the whisky. It is a perfect choice for those who are looking for a well-aged, smoky, and sophisticated whisky.

Production Methods

Caol Ila 18 Year Old is a single malt Scotch whisky that is produced using traditional methods on the Isle of Islay. The malted barley used in the production of this whisky is sourced from the Port Ellen maltings and is milled into grist before being combined with hot water to form a mash. The resulting liquid is then fermented using yeast in large washbacks for several days, producing a beer-like liquid called wash. The wash is then distilled twice in copper pot stills, the first distillation producing a spirit called low wines and the second producing the final spirit. The spirit is then aged for a minimum of 18 years in oak casks, which gives it its distinctive flavor and character. Throughout the production process, the distillery follows traditional methods and uses peated malted barley, which gives Caol Ila 18 Year Old its signature smoky and peaty taste.

Serving Suggestions

Caol Ila 18 Year Old is a complex and rich single malt Scotch whisky that can be enjoyed in a variety of ways. Neat or on the rocks, it is best enjoyed in a tulip-shaped glass to fully appreciate its aromas and flavors. Its smoothness and complexity make it an ideal after-dinner drink, paired with dark chocolate or a cheese board. It also pairs well with seafood, especially oysters and smoked salmon, due to its peaty and smoky flavors. For a classic Caol Ila 18 Year Old cocktail, try it in a Rob Roy or a Penicillin for a smoky and sophisticated twist on a classic cocktail.

About The Brand: Caol Ila

Diageo owns the Caol Ila Distillery, a Scotch whiskey distillery on the Scottish island of Islay not far from Port Askaig. In reference to the distillery's position overlooking the strait between Islay and Jura, Caol Ila is derived from the Gaelic word caol le, which means 'Sound of Islay' (also known as 'Islay Strait'). Hector Henderson established it in 1846. The Isle of Jura Distillery owner Norman Buchanan took over the distillery in 1854 after it did not perform well. Bulloch Lade & Co, whiskey stock merchants from Glasgow, bought the company in 1863. Duncan Johnston was the distillery manager in 1871, according to the census. The Johnston family was associated with yet another distillery on the island since Duncan was John Johnston of Lagavulin's nephew and a relative of the Johnstons who own Laphroaig. By the 1880s, the area was producing more than 147,000 imperial gallons (670,000 L) of whiskey annually. As a result of Bulloch Lade's voluntary insolvency in 1920, a group of merchants established the Caol Ila Distillery Company Ltd. The Distillers Company bought a majority stake in Caol Ila in 1927, and Scottish Malt Distillers Ltd. acquired full ownership of the company in 1930. Due to constraints on the supply of barley to distillers during the Second World War, the distillery was forced to close between 1942 and 1945. Production continued after that up until 1972, when the distillery's whole building was destroyed. Production subsequently restarted in 1974 when a bigger distillery that George Leslie Darge had designed in the same architectural style as many of his predecessors and with his signature glass curtain walls to the still buildings was erected. Diageo eventually acquired the business.
