The second batch of Israeli single malt whisky from the Pelter Distillery enjoyed five years of maturation. The first four of those years was spent in first-fill Jim Beam bourbon barrels, after which the which was split into two parcels to mature in different casks – one was aged in Cognac casks from Otard, while the other was aged in Pelter's own brandy casks.
