In order to create distinctive, high-quality single malt whiskies utilizing age-old techniques, the founders of Bimber Distillery set out to create them. All of our barley is farmed on this one farm, where the adventure starts. It is then traditionally floor malted, manually mashed, and carefully fermented for seven days in our own hand-made wooden washbacks. Our tiny copper pot stills are heated directly by fire, and we age our spirit in carefully chosen barrels. At our distillery, our whisky is then packaged. Our hand-crafted process of making whiskey passionately blends historic techniques, knowledge, and an unwavering dedication to excellence. Bimber's initial barrels were set down on May 26, 2016, and three years later, in September 2019, we produced our first single malt whiskey (The First). The restricted release of 1,000 hand-numbered bottles sold out in just three hours. The new single malt whiskies from Bimber will come in a variety of flavors and all have our renowned approachable, fruit-forward character.
